    This iteration of Decaf Eye of the Tiger Espresso is built around a spectacular Red & Yellow Bourbon variety coffee grown by Elias & Shady Bayter and their partner Martha Montenegro at El Vergel Estate, in the Tolima region of Central Colombia. The former avocado farmers decided to plant coffee in 2006, switching their focus to specialty coffee using anaerobic fermentation methods. This lot underwent a 48-60-hour natural anaerobic fermentation with controlled pH levels, followed by an intermittent drying process that culminated in a uniquely complex and fruit-forward flavor profile rarely seen in decaffeinated coffee.

    We then included a pair of coffees from two of the world's most distinguished producing countries. The first was grown by smallholder farmers in the Popayan region of western Colombia. This coffee helps to bring the characteristics of the blend's other components into balance by adding flavors of dried fruit and a graham cracker-like sweetness. We like it so much that we have featured it as a single-origin offering in the past! The other comes from the Minas Gerais region of Brazil, and is a blend of natural and pulped-natural lots. Its sweet and subtly nutty flavors add complexity and depth to the blend, and together these coffees create a delicious espresso that pairs well with milk yet can stand on its own.

    Decaf Eye of the Tiger is a seasonally evolving espresso blend that features in-season coffees. We originally developed this decaffeinated espresso blend for our cafes, where we continue to serve it daily in all locations throughout California. We simply think of this blend as a delicious espresso that just happens to be decaffeinated. All components are decaffeinated using the chemical-free water processed method.

    While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
