Decaf Nicaragua Finca Idealista Carbonic Natural

A single origin decaf coffee produced by a handful of farmers in Jinotega region of Nicaragua, this unique coffee represents two different processing methods from Finca Idealista: both the natural-process and carbonic maceration.

Carbonic maceration is a variation of anaerobic processing seldom used as it requires special equipment and expertise to soften the tissue of the coffee fruit in order to yield especially concentrated fruit flavors. This coffee was then decaffeinated using the chemical-free Swiss Water Process.

Origin Story

Gold Mountain Coffee

Decaf Nicaragua Finca Idealista was produced by a handful of farmers in collaboration with Gold Mountain Coffee, which represents more than 70 growers in the Jinotega region of Nicaragua. The coffee comes primarily from the farm of Maximino Palacios and Marlene Hernandez, with smaller amounts from Gold Mountain’s farm, Finca Idealista, along with the farms of Carlos Garcia, Juan Carlos Salgado, Aracely Montenegro, and Yesenia Salgado Lanzas.

Because so many producers contributed to this delicious coffee, we decided to name it after the farm where it was processed, Finca Idealista, where the Gold Mountain team has been perfecting the carbonic maceration process for several years. This coffee is a blend of traditional natural processed and natural carbonic macerated coffees. Coffee processed using the natural, or dry method (no water is used to wash the coffee), where the coffee cherry is left to dry fully intact on the beans, creates a fruit-forward flavor profile on its own. Carbonic maceration is a variation of anaerobic processing seldom used as it requires special equipment and expertise. The process involves the use of carbon dioxide that gets pumped into sealed fermentation tanks, which displaces oxygen and creates an anaerobic environment that softens the tissue of the coffee fruit and results in especially concentrated fruit flavors.

Why We Love This Coffee

Decaffeinated coffees go through intense processing that can diminish the structural integrity of the beans, so generally we use a gentle application of heat throughout the roasting process to ensure we highlight the coffees’ inherent flavor characteristics. Decaf Nicaragua Finca Idealista Carbonic Natural has a fruit-forward flavor profile, and applying too much heat early in the roast could burn the sugars that develop on the beans’ exterior during processing, making gentle heat application even more paramount.

This coffee was decaffeinated using the Swiss Water Process of caffeine extraction, without the use of chemical solvents. The coffee soaks in a water saturated green coffee extract that contains soluble coffee components just under equilibrium with that of the coffee beans, so soluble coffee components such as caffeine, only flow out of the beans and into the extract. The caffeine laden extract then passes through activated carbon filters that catch the caffeine molecules and the process is repeated until the beans are 99.9% caffeine free.
