    This iteration of Decaf Eye of the Tiger Espresso is built around a coffee produced by Haile Gebre, who grew up among the farms of Yirgacheffe, one of Ethiopia’s most storied producing regions. After being forced from the region as a child, it took Haile decades to return to the coffee industry, but today, he is known as the “Godfather of Guji” due to his years of experience in local government, cooperative management, and coffee farming.

    Gebre’s Shakisso is a 640-hectare, semi-forest farm, as well as a washing station that collects coffee from more than 300 neighboring smallholder farmers. Together with legendary producer Tesfaye Bekele of Suke Quto farm, Gebre has made a name for Guji over the last two decades in the specialty coffee industry, helping the region earn a reputation for nuanced, complex, and sought-after Ethiopian flavor profiles.

    We rounded out the blend with a coffee from Peru’s Asociación de Productores Cafetaleros Selva Central (APROSELVA) cooperative, which is based in the Junín growing region. APROSELVA is dedicated to improving the livelihood of its 530 members, providing training and financing aimed at increasing quality, yields and producer earnings. Smallholder farmers cultivate an average of ten hectares of land and supplement their coffee production with that of other fruits such as citrus and banana.

    Decaf Eye of the Tiger is a seasonally evolving espresso blend that features in-season coffees. We originally developed this decaffeinated espresso blend for our cafes, where we continue to serve it daily in all locations throughout California. We simply think of this blend as a delicious espresso that just happens to be decaffeinated. All components are decaffeinated using the chemical-free water processed method.

    While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
