    This iteration of Decaf Eye of the Tiger Espresso is built around a natural processed coffee produced by smallholders in Ethiopia’s Guji Zone. In the past, Guji coffee was bulked together with coffee from Yirgacheffe and Sidama and often sold under the “Sidamo” trade name. For the past couple of decades however, Guji (and Yirgacheffe) have become individually acknowledged for producing high quality coffee in their own right, which is now clearly labeled using their own names. Like most areas of southern Ethiopia, Guji has many local landraces of coffee. These are varieties that are indigenous to the area, often having grown naturally in the area for centuries. Many smallholders grow coffee in their backyards. They usually take their harvest to the nearest washing station. Most of these small semi-forest farms share similar altitudes, soil types, and varieties. As a result, the coffee that comes from a particular washing station will all have a unique flavor profile.

    Prior to being decaffeinated, this coffee was processed using the natural method, where the seeds are dried-in-the-fruit rather than after the fruit has been removed. The resulting flavor is dramatically different, in the best cases exhibiting fruit-forward intensity and sweetness.

    We then added a coffee produced by smallholder farmers in the Popayan region of western Colombia, which contributes body, balance, and a graham cracker-like sweetness to the espresso. We like this coffee so much that we have featured it as a single-origin offering in the past!

    Decaf Eye of the Tiger is a seasonally evolving espresso blend that features in-season coffees. We originally developed this decaffeinated espresso blend for our cafes, where we continue to serve it daily in all locations throughout California. We simply think of this blend as a delicious espresso that just happens to be decaffeinated. All components are decaffeinated using the chemical-free water processed method.

    While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
