We’re excited to present the latest edition of our seasonally evolving espresso blend, Eye of the Tiger. This iteration features a coffee from Kenya, which imparts a vibrant, juicy acidity to the espresso. Freshly harvested cherries are delivered to cooperatively managed wet mills, where they undergo meticulous grading and processing. With a favorable combination of climate, high-quality varieties, and exceptional processing methods, it’s no wonder that Kenya is home to some of the world’s finest coffees.

To add complexity and depth, we’ve included a coffee from Finca El Injerto, one of Guatemala’s most renowned coffee farms. Finca El Injerto has consistently dominated national tasting competitions, securing over a dozen Cup of Excellence final placements, including an impressive seven first-place finishes! Founded in 1874 by JesĂºs Aguirre PanamĂ¡, the farm’s first coffee trees were planted around 1900, and today, the Aguirre family’s third and fourth generations continue to manage this iconic farm.

Next, we’ve blended in a honey-processed coffee from Thailand, which contributes fruit-forward flavors and body to the espresso. This particular lot was processed by coffee industry veteran Noi Duongdee, a respected processor with over a decade of experience. The coffee was harvested and pulped with a significant amount of fruit still attached to the beans, classifying it as a red-honey processed coffee, so named for its sticky, honey-like appearance. Honey-processed coffees are often classified by the amount of fruit left on the beans during drying, with darker colors indicating more fruit was left.

Lastly, we’ve rounded out the blend with a coffee from Suke Quto, an exceptional farm in Ethiopia’s Guji region, owned and operated by Ato Tesfaye Bekele, a key figure in putting the area on the specialty coffee map. Spanning nearly 550 acres, Suke Quto’s coffee farm, washing station, and dry mill have become influential in the region. Suke Quto works with 171 neighboring farmers who deliver cherries to the mill. Although included at a smaller percentage, this fully washed coffee adds a sweet finishing touch, with flavors of stone fruit that perfectly complete the espresso.

Why We Love This Coffee

For those unfamiliar with the Eye of the Tiger concept, we do not attempt to maintain a fixed flavor profile for this blend, as we do with our year-round espresso blends. Instead, we work with in-season coffees to develop a blend that shows off the flavors of the component coffees in ways. Eye of the Tiger is the espresso served at our Oakland and Proof Lab cafe locations.

This version’s component coffees culminate in an espresso that can be enjoyed on its own as well as in milk-based drinks. We will roast this version of Eye of the Tiger only as long as the blend components last. While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
