Java Mount Ijen Natural

Mount Ijen was processed using the natural, or dry method, where the coffee cherries are left on the beans fully intact while drying on raised beds. The result is a fruit-forward flavor profile not often seen in coffees from Indonesia.

This East Java coffee came to us by was of Kevenka Coffees, who we work with to offer you unique and traceable lots from a curated network of coffee producers in Indonesia.

Origin Story

Multiple Producers, Kevenka Coffees

The return of a natural processed coffee from our friends at Kevenka Coffee [formerly Belift]. Kevenka operates a receiving station and processing facility in the Mount Ijen region, which is located on the eastern end of the Indonesian island of Java. In 2023, Equator contributed funds from our Golden Hour give back program to help build solar drying infrastructure at this site. Kevenka also has a dry mill in the city of Surabaya which allows them to manage all aspects of the production process. This is the fourth year we have offered coffees from this group.

Unlike the most familiar Indonesian coffee producing island of Sumatra, which is known for its polarizing wet-hulled coffees, coffee producers in Java have historically used the washed method to process their coffee. However, the team at Belift have been experimenting with alternative processing methods along with their producing partners rarely seen in Indonesia. This lot was processed using the natural, or dry method, where the coffee cherries are left on the beans fully intact while drying on raised beds. The result is a fruit-forward flavor profile not often seen in coffees from Indonesia. Access to fresh water is scarce in the area and this method of processing requires a small fraction of the water compared to Java’s more traditional washed method.
