Our newest coffee was produced by innovative Colombian coffee farmer Jairo Arcila on his Quindío farm, Finca Santa Monica.

This unique flavor profile is an example of what can be achieved using an alternative fermentation process. Fresh strawberries were added to the coffee during the anaerobic fermentation, resulting in a vibrant profile we liken to strawberry soda, raspberry, and black currant.

Origin Story

Jairo Arcila

This coffee was produced by Jairo Arcila on Finca Santa Monica, a farm located in the Quindío department of western Colombia. Jairo spent forty years working as a mill manager for one of Colombia’s largest coffee exporters until his retirement in 2019. A third generation coffee producer, Jairo purchased his first farm in 1987, and over the years he has managed to acquire an additional five farms.

Jairo’s two sons, Carlos and Felipe, are carrying on the family tradition of producing outstanding coffee. In 2015, they formed Cofinet, a family business focused on producing, sourcing, and exporting coffees with unique flavor profiles achieved through the use of alternative fermentation processes. Carlos and Felipe have helped Jairo improve coffee quality by implementing better picking and sorting practices, and by planting higher quality potential varieties.

Why We Love This Coffee

This coffee’s unique flavor profile is an example of what can be achieved using one such alternative fermentation process. Before being pulped, the coffee went through a dry anaerobic fermentation period of 72 hours. During this fermentation stage, mashed fresh strawberries and wine yeast were added to the coffee to impart flavor and to control the amount of fermentation taking place. The cherries were then pulped and placed on raised beds to dry with trace amounts of fruit left on the beans, classifying this coffee as a honey-processed lot. Mashed fresh strawberries were again added to the coffee during drying, resulting in intense strawberry-like flavors.
