One of the most vibrant single origin decaf coffees we’ve tasted, this spectacular Red & Yellow Bourbon variety coffee was sourced from the Tolima region of Central Colombia, and decaffeinated using the chemical-free Swiss Water Process.

This coffee underwent a 48-60 hour natural anaerobic fermentation that culminated in a uniquely complex and fruit-forward flavor profile rarely seen in decaf.

Origin Story

Elias & Shady Bayter, Martha Montenegro

This spectacular Red & Yellow Bourbon variety coffee was grown by Elias & Shady Bayter and their partner Martha Montenegro at El Vergel Estate, in the Tolima region of Central Colombia. The former avocado farmers decided to plant coffee in 2006, switching their focus to specialty coffee using anaerobic fermentation methods. This lot underwent a 48-60-hour natural anaerobic fermentation with controlled pH levels, followed by an intermittent drying process that culminated in a uniquely complex and fruit-forward flavor profile rarely seen in decaffeinated coffee.

The farm includes a diverse planting of varieties and modern equipment, including new storage silos and solar panels. Innovation and sustainability are deeply rooted in El Vergel’s ethos.

Why We Love This Coffee

Decaffeinated coffees go through intense processing that can diminish the structural integrity of the beans, so generally we use a gentle application of heat throughout the roasting process to ensure we highlight the coffees’ inherent flavor characteristics. Decaf Colombia El Vergel Anaerobic Natural has a fruit-forward flavor profile, and applying too much heat early in the roast could burn the sugars that developed on the beans’ exterior during processing, making gentle heat application even more paramount.

This coffee was decaffeinated using the Swiss Water Process of caffeine extraction, without the use of chemical solvents. The coffee soaks in a water saturated green coffee extract that contains soluble coffee components just under equilibrium with that of the coffee beans, so soluble coffee components such as caffeine, only flow out of the beans and into the extract. The caffeine laden extract then passes through activated carbon filters that catch the caffeine molecules and the process is repeated until the beans are 99.9% caffeine free.
